Topped with chives over a slice of homemade bread, we think there might be no better breakfast.
Ingredients 2 large eggs 2 tsp. 2% or whole milk Greek yogurt Kosher salt
Freshly ground black pepper 1/2 tbsp. unsalted butter 2 tsp. thinly sliced chives
Directions In a medium bowl, whisk eggs and yogurt until blended; season with salt and pepper.
In a medium nonstick skillet over medium-low heat, melt butter. Add egg mixture and cook, undisturbed, until eggs just start to set, about 2 minutes.
Using a rubber spatula, gently move eggs around in skillet to scramble. When eggs are almost cooked through, fold in chives.
Continue to cook, stirring, until scrambled to your liking, about 1 minute more
